It doesn't matter If you eat it with a fork, between some bread or traditionally by hanging it above your mouth, it's great either way. It's normally served with diced onion and a sweet pickle.

Hollandse Nieuwe is the Dutch name for herring, which is caught and sold during a certain period of the year. During the rest of the year, the name Hollandse maatjesharing is used. The name maatjesharing is a derogative of maagdenharing (virgin in the sense that the sexually mature male fish in this period of the cycle has no roe and the female fish has no spawn).
